Restaurants and Cuisine:
Liberian cuisine is a blend of West African recipes and ingredients with cooking traditions from the American South and Creole influences. Rice is a staple, often served with stews or soups. Popular dishes include:

  • Fufu, Dumboy, and GB (Geebee): Starchy foods made from cassava.
  • Stews (“soups”): Heavy, often spicy stews made with ingredients like potato greens, bitter ball, and dried fish.
  • Torborgee: A stew made with African eggplants and spiced with fermented palm oil.
  • Bitter Leaf: A stew featuring bitter leaves and grounded melon seeds.
  • Cassava Leaf (Gbassajama): Grounded cassava leaves braised in broth with red palm oil.
